Coconut and Mango Bircher Muesli
Gluten free, dairy free and refined sugar free
2 cups oats
1/4 cup chia seeds
400ml tinned coconut milk
100g coconut blossom nectar (from healthfood shops or Ocado)
100g fresh coconut pieces, grated or 1 apple, grated or 1 mango diced
200ml coconut yoghurt – we use CO YO
50g coconut blossom nectar
You will need to soak the oats overnight ready for breakfast, so put the oats, chia seeds coconut milk, water and 100 g of coconut blossom nectar into a bowl, cover and put in the fridge.
The next morning, stir in the grated coconut (or grate an apple or dice a mango and stir those in). Mix the coconut yoghurt and 50g coconut blossom nectar together and put aside. Peel the mango and cut off the flesh, put it in a blender and whiz to a puree.
Divide the oats between your bowls, top with a layer of the coconut yoghurt mix and spoon some mango puree on top.
The muesli will keep in the fridge for about three days if you didn’t want to use it all at once.
