200ml
white rum
120ml fresh lime juice
60ml sugar syrup
A good handful of fresh mint leaves
240ml sparkling water

Method
Place all the ingredients, except the ice, water and mint into a container,
stir and leave on ice.
To serve
Place about 8 mint leaves into each glass, crush the mint with a long
spoon, stir the mixture and add about ¾ to each glass. Fill
with ice and top with water. Stir, garnish with mint, add stirrer
and serve.
